Try this quick fall recipe, perfect for a Thanksgiving side!
-1 package Gnocchi
-3 cups broccoli florets
-2 cups diced butternut squash
-1 red onion, diced
-1/4 cup olive oil
-1 tsp dried thyme leaves
-1 tsp sea salt
-1/2 tsp onion powder
-1 stick butter
-2 cloves of garlic, minced
-1/4 cup fresh sage leaves, sliced
Preheat oven to 425 degrees, and spray sheet pan with nonstick spray
Add vegetables, olive oil, and spices to a bowl and toss to combine.
spread mixture on sheet pan and roast for 25 minutes, stirring once.
While vegetables are roasted, prepare sauce by heating butter in a sauce pan over medium heat.
Once bubbling, add the garlic and cook for about a minute. Add the sage and remove from heat.
Once the vegetables are done roasting, toss with the sauce! Enjoy!
